In this post, you will learn how to make oat and milk kefir pancakes. My family and I like to vary our breakfast options. Or maybe I’m the one who prefers to have a variety of breakfast options ?. And since my kids love pancakes, I like to make them myself. It’s very easy and quick to make, especially if you already have all the ingredients at home.
I usually like to vary the flour I give to my family. I personally try to avoid wheat, unless it is fermented. For this recipe, I really like the taste of oats mixed with millet. Sometimes I add amaranth as well. Then I mix it all together with a super mixer that I use to make my flour. But it’s not really necessary, if you prefer, you can just buy the oat flour and mix it with other flours. Sometimes, I also buy flour that is a mixture of rice and millet. Many people use almond or buckwheat flour. If you use one of those flours for the first time, it is better to experiment when you are not under pressure, because it is not guaranteed that you’ll get it right the first time. I say that from my own experience ?
Below is the recipe I make at home:
- 200g flour (about 120 oats, 80 millet)
- 50 g butter or coconut oil
- Baking powder, bicarbonate
- 300g milk kefir or any other milk
- A pinch of salt
- 1-2 eggs
- Grind the flour if you make it homemade
- Add the other ingredients, except the kefir and the egg, mix everything
- Once it is mixed, add the kefir and the egg and beat everything until you have a homogeneous mixture
- Heat the skillet or comal, add a little coconut oil or fat if necessary
- Put a spoonful of the mixture in the hot pan, and when ready, turn it over
I make the first pancake very small. That way I can see if the pan is hot enough. I wait for the bubbles to come out, and then I turn it over. And so on… You can serve it with honey, maple syrup and/or fruit.
Sometimes what I do is I make the mixture twice, cook the pancakes without browning them, and save them for the next day. The following day I heat them up with a little butter. They’re delicious!
I have to confess that the first few times I made them, I failed. I didn’t have the perfect recipe. In fact, the original recipe has wheat flour and milk in it. But I wanted to use the kefir I had leftover, and my own flour. The kefir gives it a little bit of a sour taste, but it is hardly noticeable and we love it!
When I’m in a hurry, what I do is prepare the flour the night before. So I just mix the rest of the ingredients and it’s actually very quick to make. The only thing that takes time is to cook them one by one. I love to make oat and kefir pancakes, have you tried this recipe before?
Also what I’ve made with this same recipe are waffles. I bought a little electric machine to make 4 waffles at once, and it’s a variation of the same breakfast. And for the kids, it’s like a completely different breakfast.
